Here are my 3 suggestions:

A 1-on-1 1 hour class from the explorer (or scholar) of their choice in the explorer's (or scholar's) field of expertese/of the options listed by the explorers.
An ACA hat or shirt with the mascot of their choosing
A painting or other similar work from an ACA student along with a picture of them holding the art and a biography of sorts for the student.
